Iranian pistachios are known by variety rather than by grade name. Shape and size decide where a nut sells best, so this is where most buyers start.

The longest and largest of the long nuts, with a wide natural split.

From the orchard to your container
Pistachios are harvested once a year, in late summer. Every lot then goes through the same steps before it is loaded.
Harvest
Ripe clusters are picked in September, when the hulls turn rosy.
Hulling and drying
The soft hull comes off on the same day, then the nuts are dried.
Sorting
Nuts are split by variety, size and opening; defects are removed.
Testing
Samples are checked for moisture and aflatoxin before packing.
Packing
Jute or PP bags, cartons or vacuum packs, labelled for your market.
Shipping
Loaded and sent with the export documents your country asks for.
